Mediterranean Chicken Zucchini Bake Recipe

Because of its ability to absorb flavors well, zucchini pairs beautifully with herbs, cheese, tomatoes, and various proteins. Its versatility, nutritional benefits, and delicious taste make zucchini a favorite ingredient in many healthy and flavorful dishes.

Ingredients

  • 2 boneless, skinless chicken breasts, diced
  • 2 medium zucchini, sliced into rounds
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 3 cloves garlic, minced
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a baking dish.
  2. In a large bowl, combine chicken, zucchini, tomatoes, onion, and garlic.
  3. Drizzle with olive oil and season with oregano, basil, paprika, salt, and pepper. Toss well.
  4. Spread the mixture evenly in the prepared baking dish.
  5. Bake for 25–30 minutes, or until the chicken is fully cooked and the vegetables are tender.
  6. Sprinkle feta cheese over the top and bake for an additional 5 minutes.
  7. Remove from the oven and garnish with fresh parsley.
  8. Serve warm and enjoy this healthy Mediterranean-inspired meal.

Serving Suggestion
