The next day, drain them thoroughly and place them in a food processor with one small chopped onion, three cloves of garlic, one cup of fresh parsley, one teaspoon of cumin, one teaspoon of coriander, half a teaspoon of baking soda, one teaspoon of salt, and half a teaspoon of black pepper. Blend the ingredients until they form a coarse mixture. Refrigerate the mixture for about 30 minutes to help it firm up.

Once chilled, shape the mixture into small balls or patties. Heat oil in a deep pan and fry the falafel until they are crispy and golden brown on the outside. Remove them from the oil and place them on paper towels to absorb excess oil.

Next, prepare a simple tahini sauce by mixing a quarter cup of tahini, two tablespoons of lemon juice, one minced garlic clove, a few tablespoons of water, and a pinch of salt. Stir until the sauce becomes smooth and creamy.

To assemble the wrap, warm four pita breads or tortillas. Spread a layer of tahini sauce on each one. Add shredded lettuce, diced tomatoes, chopped cucumbers, and thinly sliced red onions. Place several falafel pieces on top of the vegetables and drizzle with additional sauce if desired.

Fold the sides of the bread inward and roll it tightly to create a wrap. Serve immediately while the falafel is still warm and crispy. The wrap can also be paired with fries, pickles, or a fresh salad for a complete meal.

  • 4 large pita breads or tortillas
  • 1 cup shredded lettuce
  • 1 tomato, diced
  • 1 cucumber, diced
  • ½ red onion, thinly sliced

Tahini Sauce

  • ¼ cup tahini
  • 2 tablespoons lemon juice
  • 2–3 tablespoons water
  • 1 clove garlic, minced
  • Salt to taste

Instructions

Step 1: Prepare the Chickpeas

Drain the soaked chickpeas thoroughly. Do not use canned chickpeas, as they can make the falafel mixture too soft.

Step 2: Make the Falafel Mixture

Add chickpeas, onion, garlic, parsley, cumin, coriander, baking soda, salt, and pepper to a food processor. Pulse until the mixture is finely ground but not completely smooth.

Step 3: Chill the Mixture

Transfer the mixture to a bowl and refrigerate for 30 minutes. This helps the falafel hold its shape.

Step 4: Shape the Falafel

Form the mixture into small balls or patties, about 1–2 inches wide.

Step 5: Fry the Falafel

Heat oil to 175°C (350°F). Fry the falafel in batches for 3–4 minutes until golden brown and crispy. Drain on paper towels.

Step 6: Make the Tahini Sauce

Whisk together tahini, lemon juice, garlic, water, and salt until smooth and creamy.

Step 7: Assemble the Wrap

Warm the pita bread or tortilla. Spread a spoonful of tahini sauce on the bread. Add lettuce, tomato, cucumber, onion, and several falafel pieces.

Step 8: Roll and Serve

Fold in the sides and roll tightly into a wrap. Serve immediately with extra tahini sauce or fries.
