Instructions
Step 1: Prepare the Chickpeas
Drain the soaked chickpeas thoroughly. Do not use canned chickpeas, as they can make the falafel mixture too soft.
Step 2: Make the Falafel Mixture
Add chickpeas, onion, garlic, parsley, cumin, coriander, baking soda, salt, and pepper to a food processor. Pulse until the mixture is finely ground but not completely smooth.
Step 3: Chill the Mixture
Transfer the mixture to a bowl and refrigerate for 30 minutes. This helps the falafel hold its shape.
Step 4: Shape the Falafel
Form the mixture into small balls or patties, about 1–2 inches wide.
Step 5: Fry the Falafel
Heat oil to 175°C (350°F). Fry the falafel in batches for 3–4 minutes until golden brown and crispy. Drain on paper towels.

Whisk together tahini, lemon juice, garlic, water, and salt until smooth and creamy.
