Butternut squash soup gets its natural sweetness from the squash itself, which becomes even sweeter when roasted because the heat brings out its natural sugars. That’s why many people describe it as tasting almost like a cozy mix between soup and comfort food dessert.

Butternut Squash Soup
Preparation Time: 20 minutes
Cooking Time: 40–45 minutes
Servings: 4–6 people
Ingredients
- 1 medium butternut squash (about 1–1.5 kg), peeled, seeded, and cubed
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 2 tablespoons olive oil or butter
- 4 cups vegetable broth or chicken broth
- ½ cup milk or cream (optional, for extra creaminess)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon paprika or nutmeg (optional)
- 1 tablespoon honey or maple syrup (optional for extra sweetness)
Optional Toppings
- Pumpkin seeds
- Fresh parsley
- Croutons
- A swirl of cream
- Black pepper
Instructions
Step 1: Prepare the squash
Wash the butternut squash thoroughly. Cut it in half carefully, remove the seeds with a spoon, peel the skin, and cut the flesh into medium-sized cubes.
Step 2: Roast the vegetables (optional but recommended)
Preheat the oven to 200°C (400°F). Place the squash cubes, onion, and garlic on a baking tray. Drizzle with olive oil and roast for 25–30 minutes until slightly golden and soft. Roasting gives the soup a richer, sweeter flavor.
Step 3: Cook on the stove
Transfer the roasted vegetables into a large pot. Pour in the broth and bring to a gentle boil.
Step 4: Simmer
Lower the heat and simmer for 10–15 minutes so the flavors combine well.
Step 5: Blend the soup
Use an immersion blender directly in the pot or carefully transfer the soup to a blender. Blend until smooth and creamy.
Step 6: Add cream and seasonings
Return the soup to low heat if needed. Stir in milk or cream, salt, pepper, and optional spices such as paprika or nutmeg. Add honey or maple syrup if desired.
Step 7: Final cooking
Cook for another 2–3 minutes, stirring gently. Do not boil heavily after adding cream.
Serving Suggestions
Serve hot with:
- Garlic bread
- Toasted bread slices
- Grilled cheese sandwiches
- Fresh salad
Tip: For a thicker soup, use less broth. For a lighter soup, add extra broth or water until you reach your preferred consistency.
