Ingredients

For the Cheesecake Filling

  • 1 package (8 oz / 225 g) cream cheese, softened
  • 1 box (3.4 oz / 96 g) instant cheesecake pudding mix
  • 1 cup cold milk
  • 1 cup whipped topping (such as Cool Whip), thawed

For the Fruit

  • 2 cups pineapple chunks, drained
  • 1 can (15 oz / 425 g) mandarin oranges, drained
  • 2 cups fresh strawberries, sliced
  • 2 bananas, sliced
  • 1 cup seedless grapes, halved
  • 1 cup mini marshmallows

Optional Garnishes

  • Toasted coconut flakes
  • Chopped macadamia nuts
  • Maraschino cherries
  • Fresh mint leaves

Instructions

Step 1: Make the Cheesecake Base

  1. In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  2. Add the instant cheesecake pudding mix and cold milk.
  3. Beat for 2–3 minutes until thick and well combined.
  4. Gently fold in the whipped topping until the mixture becomes light and fluffy.

Step 2: Prepare the Fruit

  1. Drain the pineapple and mandarin oranges thoroughly to prevent excess liquid from thinning the salad.
  2. Wash and slice the strawberries.
  3. Slice the bananas just before mixing to keep them fresh.
  4. Halve the grapes if desired.

Step 3: Assemble the Salad

  1. Add the pineapple, mandarin oranges, strawberries, bananas, grapes, and mini marshmallows to the cheesecake mixture.
  2. Gently fold everything together until all the fruit is evenly coated.

Step 4: Chill

  1. Cover the bowl with plastic wrap or a lid.
  2. Refrigerate for at least 1 hour to allow the flavors to blend and the filling to set.

Step 5: Serve

  1. Stir gently before serving.
  2. Garnish with toasted coconut, macadamia nuts, cherries, or mint if desired.
  3. Serve chilled.

Tips for Success

  • Pat canned fruit dry with paper towels after draining for a thicker salad.
  • Add bananas right before serving if making ahead.
  • For extra tropical flavor, mix in diced mango, kiwi, or papaya.
  • Use freshly whipped cream instead of whipped topping for a homemade version.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
