This easy slow-cooker version of the popular “Marry Me Chicken” combines tender chicken, a creamy Parmesan sauce, and savory sun-dried tomatoes. Just dump the ingredients into the crockpot and let it do the work.

Dump and Go Crockpot Marry Me Chicken

Ingredients

  • 2 lbs (900 g) boneless, skinless chicken breasts or thighs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup chopped sun-dried tomatoes (drained if packed in oil)
  • 3 cloves garlic, minced
  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons fresh basil or parsley, chopped (for garnish)

Instructions

  1. Place the chicken in the bottom of a 6-quart slow cooker.
  2. Season with salt, pepper, garlic powder, and Italian seasoning.
  3. Add the chicken broth, heavy cream, Parmesan cheese, sun-dried tomatoes, and minced garlic over the chicken.
  4. Cover and cook:
    • Low: 4–6 hours
    • High: 2–3 hours
  5. Once the chicken is cooked through and tender, stir the sauce. If you prefer a thicker sauce, mix the cornstarch with 1 tablespoon of cold water and stir it into the crockpot. Cover and cook for another 15–20 minutes.
  6. Garnish with fresh basil or parsley before serving.

Tips

  • Chicken thighs stay especially juicy in the slow cooker.

  • For a little heat, add ¼ teaspoon red pepper flakes.
