For the Enchiladas
- 2 cups cooked, shredded chicken
- 8 small flour tortillas
- 2 cups shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
For the Creamy Green Chile Sauce
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 cup sour cream
- 1 can (120–150 g) diced green chiles
- 1 teaspoon garlic powder
- 1/2 teaspoon cumin
- Salt and black pepper to taste
Instructions
- Preheat oven to 190°C (375°F).
- In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
- Gradually add chicken broth, whisking until smooth.
- Stir in green chiles, garlic powder, cumin, salt, and pepper. Simmer for 3–4 minutes.
- Remove from heat and stir in sour cream until smooth.
- Mix shredded chicken with 1 cup Monterey Jack cheese.
- Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in a greased baking dish.
- Pour the green chile sauce evenly over the enchiladas.
- Sprinkle remaining Monterey Jack and cheddar cheese on top.
- Bake for 20–25 minutes, or until bubbly and lightly golden.
- Let rest for 5 minutes before serving.
