Ingredients

For the Streusel Topping

  • 1 cup all-purpose flour
  • ½ cup brown sugar

For the Cake

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup sour cream

Optional Glaze

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

Step 1: Prepare the Oven and Pan

Preheat your oven to 350°F (175°C). Grease a 9-inch square baking pan or line it with parchment paper.

Step 2: Make the Streusel

In a medium bowl, combine flour, brown sugar, cinnamon, and salt. Pour in the melted butter and mix until crumbly. Set aside.

Step 3: Prepare the Cake Batter

In a bowl, whisk together the flour, baking powder, baking soda, and salt.

In a separate large bowl, cream the softened butter and sugar until light and fluffy, about 3 minutes. Beat in the eggs one at a time, then add the vanilla extract.

Gradually mix the dry ingredients into the butter mixture, alternating with the sour cream. Stir until just combined. Avoid overmixing to keep the cake tender.

Step 4: Assemble the Cake

Spread half of the batter into the prepared baking pan. Sprinkle half of the streusel mixture evenly over the batter. Add the remaining batter and gently spread it out. Top with the remaining streusel.

Step 5: Bake

Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for 15 minutes.

Step 6: Add the Glaze

Whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over the slightly cooled cake.
