Ingredients

For the crust:

  • 1 cup (225 g) unsalted butter, softened
  • 2 cups (250 g) all-purpose flour
  • ½ cup (100 g) granulated sugar
  • ¼ teaspoon salt

For the filling:

  • 3 cups rhubarb, finely chopped
  • 2 large eggs
  • 1½ cups (300 g) granulated sugar
  • ¼ cup (30 g) all-purpose flour
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
  2. Make the crust:
    • In a bowl, combine softened butter, flour, sugar, and salt.
    • Mix until crumbly.
    • Press evenly into the bottom of the prepared pan.
    • Bake for 15–18 minutes, or until lightly golden.
  3. Prepare the filling:
    • Whisk together eggs, sugar, flour, salt, and vanilla until smooth.
    • Stir in the chopped rhubarb.
  4. Bake:
    • Pour the rhubarb mixture over the hot crust.
    • Return to the oven and bake for 35–40 minutes, until the filling is set and lightly golden.
  5. Cool completely in the pan.
    • Refrigerate for at least 1 hour for cleaner slices.
    • Cut into squares and serve.

Optional Variations

  • Add ½ teaspoon cinnamon to the filling.
  • Mix in 1 cup sliced strawberries for strawberry-rhubarb bars.
  • Dust cooled bars with powdered sugar before serving.

These bars are delicious chilled and will keep in the refrigerator for up to 5 days.
