Ingredients

  • 1 cup quinoa, rinsed

  • ¼ cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

Instructions

Step 1: Cook the Quinoa

  1. In a saucepan, combine quinoa and water.
  2. Bring to a boil, then reduce heat and cover.
  3. Simmer for 15 minutes or until the water is absorbed.
  4. Remove from heat and let it cool.

Step 2: Prepare the Vegetables

  1. Wash and chop the cucumber, tomatoes, bell pepper, onion, and parsley.
  2. Place them in a large mixing bowl.

Step 3: Make the Dressing

  1. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.

Step 4: Combine Everything

  1. Add the cooled quinoa to the vegetables.
  2. Pour the dressing over the salad.
  3. Toss gently until well mixed.
