Ingredients

  • 6 ripe tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • 1 red bell pepper, chopped
  • ½ small onion, chopped
  • 2 garlic cloves
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup cold water

Instructions

  1. Wash and chop all vegetables into small pieces.
  2. Place tomatoes, cucumber, bell pepper, onion, and garlic in a blender.
  3. Add olive oil, vinegar, salt, pepper, and cold water.
  4. Blend until smooth. For a thinner consistency, add more water.
  5. Taste and adjust seasoning if needed.
  6. Refrigerate for at least 2 hours until well chilled.
  7. Serve cold and garnish with diced vegetables, croutons, or fresh herbs.
