Ingredients (Serves 4)

For the tostadas

  • 8 corn tortillas
  • 2 tablespoons vegetable oil

For the toppings

  • 1 cup refried beans
  • 2 cups cooked shredded chicken, ground beef, or pork
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • ½ cup shredded cheese (cheddar, Monterey Jack, or cotija)
  • ¼ cup diced red onion
  • 1 avocado, sliced
  • ¼ cup sour cream
  • Fresh cilantro, chopped
  • Lime wedges
  • Salt and pepper to taste

Instructions

  1. Prepare the tortillas
    • Preheat oven to 400°F (200°C).
    • Brush both sides of the tortillas lightly with oil.
    • Place on a baking sheet and bake for 8–10 minutes, flipping once, until golden and crispy.
  2. Warm the beans
    • Heat the refried beans in a small saucepan over medium heat until warm.
  3. Prepare the protein
    • Warm the cooked chicken, beef, or pork in a skillet.
    • Season with salt, pepper, and your favorite taco seasoning if desired.
  4. Assemble the tostadas
    • Spread a layer of warm refried beans on each crispy tortilla.
    • Add the meat.
    • Top with lettuce, tomatoes, onion, cheese, and avocado.
  5. Finish and serve
    • Drizzle with sour cream.
    • Sprinkle with cilantro.
    • Serve with lime wedges for squeezing over the top.
